  1. Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions until al dente.
  2. While the pasta is cooking, heat a large skillet over medium heat. Add the diced pancetta or guanciale and cook until crispy, about 5-7 minutes. Remove the skillet from the heat.
  3. In a mixing bowl, whisk together the eggs and Pecorino Romano cheese until well combined. Season with freshly ground black pepper.
  4. Once the pasta is cooked, use tongs to transfer it directly to the skillet with the pancetta, allowing some pasta water to come along with it. Toss the pasta to coat it in the rendered fat.
  5. Slowly pour the egg and cheese mixture over the pasta while continuously tossing, allowing the residual heat to cook the sauce without scrambling the eggs. The sauce should become creamy and coat the spaghetti evenly. If necessary, add a little reserved pasta water to achieve the desired consistency.
  6. Serve immediately, topped with additional Pecorino Romano cheese and freshly ground black pepper, if desired.
